Jacky’s Nutrition Spot – Cheat’s ratatouille
Super simple, yummy and the perfect accompaniment to many a meal!
- 2 courgettes, sliced
- 1 red onion, roughly diced
- 1 red pepper, roughly diced
- 6-8 mushrooms, quartered
- 4 tomatoes, quartered
- 2 tsp sugar
- 1 garlic clove
- Mixed herbs
- Using an oil spray, fry the courgettes and onion for five minutes then add the mushrooms and pepper. Cook for a further five minutes
- Add the remaining ingredients and cook over a moderate heat, for a further five minutes, gently turning occasionally
- Then serve… simple!
N.B. A more traditional ratatouille would have aubergine too. This needs to be quartered, sliced and placed on kitchen roll then sprinkled with salt. Leave for ten minutes then rinse thoroughly, pat dry and add in with the courgette and onion.
